This is a Frisch's Big Boy Restaurant recipe. If you have access to a Frisch's you may use their own Blue Cheese Dressing in the sauce.

Ingredients For blue mac & cheese

1 lbcavatappi pasta (large corkscrew type)

2 chalf and half
-
1 lbqueso blanco processed cheese, cut into 1-inch cubes

1/2 cblue cheese dressing

1/2 cshredded parmesan cheese
-
1/2 tspcayenne pepper, ground
-
1 ccheese-flavored crackers, crushed, for topping
How To Make blue mac & cheese

1Cook pasta per instructions on box while making the sauce.

2Combine the half & half and cubed queso blanco cheese in a heavy saucepan over low/medium heat, stirring often until melted.

3Whisk in the Parmesan cheese, cayenne pepper, and blue cheese dressing. Stir until melted into a sauce (it will be slightly thin at this point).

4Drain fully cooled pasta and place in a greased casserole dish. Pour the sauce evenly over top of pasta. Cover and bake for 25 minutes in a preheated 350º oven.

5Remove cover and sprinkle the crushed cheese crackers on top and bake uncovered for an additional 5 minutes.
