Ingredients For pressure cooker spanish rice

2 Tbspolive oil

1 mdyellow onion, peeled and chopped

2 clovegarlic, minced

1 mdgreen bell pepper, cored, seeded and diced

2 cuncooked long-grain white rice

3 ctomato sauce

2 cwater
-
2 tspsalt
-
1/4 tspground black pepper

1chipotle pepper (canned in adobo sauce. add some of the sauce if desired)
How To Make pressure cooker spanish rice

1Heat oil in the pressure cooker over medium-high heat. Add onion, garlic and green pepper. Cook until the onion is soft. Add the rice and cook 1 minute.

2Add remaining ingredients; cover and lock the lid. Bring to high pressure over high heat. Lower heat to stabilize the pressure. Cook for 7 minutes.

3Remove from heat and let pressure drop using the quick-release method.

4Unlock lid and stir rice before serving.
