Makes about 3 dozen. Mom made these at Christmas time, Dad really liked these. He used to call them horse balls. This cookie is a favorite of Robert's also.

Ingredients For mexican wedding cookies or russian tea cakes

  • 1/2 c
    margarine
  • 2 Tbsp
    clover honey, strained
  • 1 c
    all purpose flour, sifted
  • 3/4 tsp
    vanilla
  • 1 c
    pecans, finely chopped
  • 1/4 tsp
    salt
  • confectioners' sugar

How To Make mexican wedding cookies or russian tea cakes

  • 1
    Cream margarine, stir in honey. Add flour, salt, vanilla and pecans Mix thoroughly.

    Form balls the size of a small walnut. Place on greased baking sheet. Bake at 300 for about 20 minuets or until delicately browned.

    Roll immediately in confectioner's sugar. Cool-roll again in sugar.
