This is a very old recipe and one I remember eating as a child. We always had rhubarb growing at Grandpa and Grandma Louck's home in South Dakota.

Ingredients For rhubarb cake

  • 1/2 c
    butter
  • 1 c
    sour cream
  • 1 lg
    egg
  • 1/2 c
    sugar
  • 1 tsp
    soda
  • 1 1/2 c
    flour
  • pinch
    salt
  • 1/4 tsp
    cinnamon
  • 3 c
    rhubarb, cut in small pieces
  • TOPPING
  • 1/4 c
    flour
  • 3 Tbsp
    butter, softened
  • 1/4 c
    brown sugar
  • 1/4 c
    walnuts, chopped

How To Make rhubarb cake

  • 1
    Mix together the butter and egg, add sour cream. Add sugar, flour, soda, salt,and cinnamon, mix. Add the rhubarb and stir together.

    Pour mixture into a prepared 9" x 9" pan. Mix the brown sugar and flour together then cut the butter into the flour mixture. Add the nuts. Sprinkle on top of batter then bake at 350 for about 30 minutes. Serve with whip cream or ice cream.
