rhubarb cake
This is a very old recipe and one I remember eating as a child. We always had rhubarb growing at Grandpa and Grandma Louck's home in South Dakota.

Ingredients For rhubarb cake

1/2 cbutter

1 csour cream

1 lgegg

1/2 csugar

1 tspsoda

1 1/2 cflour

pinchsalt

1/4 tspcinnamon

3 crhubarb, cut in small pieces

1/4 cflour

3 Tbspbutter, softened

1/4 cbrown sugar

1/4 cwalnuts, chopped
How To Make rhubarb cake

1Mix together the butter and egg, add sour cream. Add sugar, flour, soda, salt,and cinnamon, mix. Add the rhubarb and stir together.

2Pour mixture into a prepared 9" x 9" pan. Mix the brown sugar and flour together then cut the butter into the flour mixture. Add the nuts. Sprinkle on top of batter then bake at 350 for about 30 minutes. Serve with whip cream or ice cream.
