This is for a stovetop cooker, such as Fagor. For a variation, drizzle with chocolate sauce before serving. Garnish with fresh mint leaves.

4 lgsemi-ripe bosc pears

750 mlfruity red wine (merlot)

1 cgranulated sugar

1 stickcinnamon (about 4-inches)

1whole clove

zest and juice of 1 orange

2 Tbspgranulated sugar

1/2 cmascarpone cheese
How To Make pears poached in wine (pressure cooker)

1Peel and core the pears. Leave them whole with the stem intact.

2Add the pears, wine, 1 cup of sugar, cinnamon stick, clove, orange zest and juice. Close and lock lid. Bring to pressure on high heat, lower to medium heat and cook for 3 minutes at high pressure.

3Release pressure using natural release method.

4Uncover, gently remove the pears and allow them to cool on a flat dish.

5Reduce wine on high heat by half.

6Mix the mascarpone gently with the remaining 2 tablespoons of sugar.

7Place each pear on a serving plate and serve a spoonful of the cheese next to each pear and drizzle with remaining sauce.
