  • 2 lb
    beef stew meat
  • 2 Tbsp
    vegetable oil
  • 1
    onion, diced
  • 4-6 clove
    garlic, minced or pressed
  • 1
    jalapeno pepper, diced with or without seeds
  • 2
    bay leaves
  • 2 tsp
    ground cumin
  • 2 tsp
    chili powder
  • 2 tsp
    paprika
  • 2 tsp
    salt
  • 1 tsp
    freshly ground pepper
  • 1 tsp
    chipotle pepper powdwe
  • 1 tsp
    mexican oregano
  • 1 c
    broth, beef or chicken
  • 8 oz
    tomato sauce
  • 2 Tbsp
    cornstarch
  • 2 Tbsp
    water

How To Make carne guisada (instant pot)

    Select the "SAUTE" mode on instant pot.

    Once the pot is "HOT," add the oil and half the stew meat to the pot. Brown the meat on all sides before transferring to a plate while you brown the other half of the stew meat.

    Once the second batch of stew meat is browned, add back the first batch of stew meat, onion, garlic, jalapeno pepper, bay leaf and spices. Stir together until everything is well mixed.

    Pour the broth and tomato sauce over the seasoned stew meat. You do not need to stir.

    Cover and lock the lid making sure the valve is in "SEALING" position. Select "MANUAL" mode and set to 35 minutes.

    After time has finished, press "CANCEL." Release the pressure manually.

    If you want to thicken the sauce, whisk the 2 T. of cornstarch with 2 T. of cold water until there are no lumps. Open the lid. Set the pot to "SAUTE."

    Gently whisk the cornstarch mix into the sauce until slightly thickened.

    Make sure to remove the bay leaves.

    Serve with tortillas, refried beans and rice. It's also delicious with scrambled eggs.
