2 lbbeef stew meat

2 Tbspvegetable oil

1onion, diced

4-6 clovegarlic, minced or pressed

1jalapeno pepper, diced with or without seeds

2bay leaves

2 tspground cumin

2 tspchili powder

2 tsppaprika

2 tspsalt

1 tspfreshly ground pepper

1 tspchipotle pepper powdwe

1 tspmexican oregano
-
1 cbroth, beef or chicken

8 oztomato sauce
-
2 Tbspcornstarch
-
2 Tbspwater
How To Make carne guisada (instant pot)

1Select the "SAUTE" mode on instant pot.

2Once the pot is "HOT," add the oil and half the stew meat to the pot. Brown the meat on all sides before transferring to a plate while you brown the other half of the stew meat.

3Once the second batch of stew meat is browned, add back the first batch of stew meat, onion, garlic, jalapeno pepper, bay leaf and spices. Stir together until everything is well mixed.

4Pour the broth and tomato sauce over the seasoned stew meat. You do not need to stir.

5Cover and lock the lid making sure the valve is in "SEALING" position. Select "MANUAL" mode and set to 35 minutes.

6After time has finished, press "CANCEL." Release the pressure manually.

7If you want to thicken the sauce, whisk the 2 T. of cornstarch with 2 T. of cold water until there are no lumps. Open the lid. Set the pot to "SAUTE."

8Gently whisk the cornstarch mix into the sauce until slightly thickened.

9Make sure to remove the bay leaves.

10Serve with tortillas, refried beans and rice. It's also delicious with scrambled eggs.
