chewy oatmeal cookies
This was originally my Grandma Lillie's recipe, but I have adjusted it to my taste. The original recipe had more oatmeal and was not as chewy and soft. I have also added the mixed dried fruit instead of just raisins, but of course, you can use just raisins.

How To Make chewy oatmeal cookies
-
1In a mixing bowl, cream the butter and sugar together until light and fluffy.
-
2Add the rest of the ingredients, in order on medium speed, mixing after the eggs, then add the soda, flour and oatmeal. Stir in dried fruit. I have used a combination of raisins, dates, & cranberries. (I have not found this in the store, but have just bought the separate fruits, diced them, and mixed it myself) Bake on a parchment paper lined cookie sheet at 375 for about 10 minutes.
-
3For sugar free and whole wheat: 2/3 cup whole wheat flour, 1/3 cup white flour and sugar substitute for brown sugar.
