drizzled meyer lemon loaf
This recipe is about as simple as baking gets! It has a sweet lemon flavor topped with a sweet-tart drizzle. Even the crumbs will disappear.

Ingredients For drizzled meyer lemon loaf
- FOR THE LOAF

1/2 cflour

2 tspbaking powder

1/2 tspsalt or to taste

1 csugar

1 Tbspfinely grated lemon zest from 1-2 lemons (meyer lemons preferable)

1 Tbspfresh squeezed meyer lemon juice

3/4 cwhole-milk greek yogurt

1/2 cvegetable oil

2 lgeggs

1/2 tspvanilla extract
- GLAZE:

1 cpowdered sugar
-
2 Tbspfresh squeezed meyer lemon juice

zest from one meyer lemon
How To Make drizzled meyer lemon loaf

1Preheat oven to 350. Coat a standard loaf pan with nonstick vegetable oil spray. Dust with flour. Tap out excess.

2Whisk flour, baking powder, and salt in a medium bowl.

3Using your fingers rub 1 cups sugar with 1 Tbsp. finely grated lemon zest from a Meyer Lemon in a large bowl until sugar is moist. Add to flour mixture along with the yogurt, vegetable oil, eggs, and vanilla, stir to blend.

4Pour batter into prepared pan. Bake until top of cake is golden brown and a tester inserted into center comes out clean, 45 - 50 minutes. Let cool in pan on a wire rack for 15 minutes. remove from pan and place loaf on rack. Let cool completely.

5Whisk together ingredients for the glaze and drizzle over loaf.
