This is Grandma Burgess' chicken salad. She did not have a recipe. I just watched how she made it and then came up with my own recipe.

Ingredients For chicken salad

4chicken breasts

2 stalkcelery, diced

1/4 csweet pickle relish

3 lgeggs, hard boiled (optional)

1 Tbspsugar

salt and pepper

miracle whip

grapes, seedless, sliced(optional)
How To Make chicken salad

1Cook chicken breast(Put about 1 1/2 cups of water in pan with chicken, add 1/2 tsp salt-when they come to a boil, cover and turn down to a simmer-cook for about 30 minutes) Cool, dice chicken

2I usually cook the eggs the same time I am cooking the chicken. To hard boil an egg: put eggs in a small pan, cover with water, put on high heat and bring to a boil, boil for 10 minutes, dump out hot water(be careful) and add cool water to pan. Peel and dice eggs.

3In a large bowl, add the cooled prepped chicken, eggs, celery, sweet pickles, stir, add salt, pepper and sugar, stir. Cover and refrigerate until ready to use. When you are ready to use just moisten the chicken salad mixture with Miracle Whip and also add the grapes at this time, if you are using them. I usually serve this on cranberry bread that we get from our local bakery.
