Found this one on facebook, but I changed it a little.

Ingredients For pineapple pecan cake

  • 1/2 c
    butter, softened
  • 1 1/2 c
    sugar
  • 2 lg
    eggs
  • 20 oz
    crushed pineapple in juice
  • 1 c
    pecans, chopped
  • 2 tsp
    baking soda
  • 2 c
    flour
  • ICING
  • 1/4 c
    butter, softened
  • 8 oz pkg
    cream cheese, softened
  • 2 c
    powdered sugar
  • 1 Tbsp
    milk
  • 1 Tbsp
    vanilla
  • 1/4 c
    chopped pecans
  • EASIER DIRECTIONS

How To Make pineapple pecan cake

    Mix the butter and sugar together, add eggs, stir. Add pineapple and juice, pecans, soda, and flour. Mix.

    Put batter in a prepared 9 x 13" pan and bake for 50 minutes at 350. Cool cake.

    Icing: Mix butter and cream cheese together. Add powdered sugar and vanilla, stir. Frost cooled cake, sprinkle with more pecans. Enjoy!

    Easier directions: Mix cake mix as per instructions, but drain the pineapple and use the juice for the liquid in mix, use 1/2 cup butter instead of oil. Add vanilla.
