Easy Homemade low carb Blueberry Muffins

I make these low carb using Tova Carbquik Bake Mix. There are other options given in this recipe.

Ingredients:

2 cups of Tova Carbquik Bake Mix OR other baking mix OR 2 cups of flour (all purpose) + 2 teaspoons of baking powder + 1/4 teaspoon salt.
•
2/3 cup of half and half OR Greek Yogurt (my choice)
•
1/2 cup of sugar or alternative (I use Splenda)
•
2 tablespoons of vegetable oil OR 1/2 cup of butter or alternative
•
1 large or 2 medium eggs
•
2 tsp of vanilla
•
1 cup of Blueberries washed and drained
•

•
2/3 cup milk
•
1/3 cup sugar

2 tablespoons vegetable oil

1 egg

3/4 cup fresh or frozen (thawed and drained) blueberries

•
1 box of yellow or angel food cake mix
•
2/3 cup of milk
•
1/3 cup of vegetable oil
•
3 large eggs
•
2 cups of fresh blueberries
