oatmeal cookies with peanut butter filling
These freeze well with or without filling. My mom got this recipe from Mrs. Oliver, our neighbor across the street. Mom would make a batch of these to take camping with us every weekend.

1 cbrown sugar, firmly packed

1 cbutter

2 cflour (scant cups)

1 tspsalt (scant teaspoon)

1 tspbaking soda

1 tspbaking powder

boiling water

3 coatmeal, uncooked
- PEANUT BUTTER FILLING

1/2 cpeanut butter, creamy

1/4 cbutter, softened
-
2 1/2 cconfectioners' sugar, sifted

1/2 tspvanilla

3-4 Tbspcream or milk
How To Make oatmeal cookies with peanut butter filling

1Cream butter and sugar together. Sift next 4 ingredients and add to creamed mixture. Mix and add oatmeal. Chill overnight before rolling thin.

2Bake at 350 for about 10 minuets or just start to brown around edges. Use a juice glass as a cutter to get about 90 cookies. Put 2 cookies together with the filling to make a sandwich cookie

3Peanut butter Filling: Cream butters together. Blend in remaining ingredients and beat until smooth.
