fried chicken
This is the way my Mom and Grandma made fried chicken, for the most part. I have added the eggs and added some other ingredients. You know this is something you all ask for when you come home and now I hope you enjoy making it for your loved ones.

How To Make fried chicken
-
1Cut up chicken any way you like, I usually cut a chicken breast in 3 pieces(lengthwise) or you can do nuggets. Put the chicken in a bowl of water with about 2 tsp salt, stir around and let set for about 15-20 minutes. Drain, add eggs with chicken and stir around until chicken is coated.
-
2In a zip lock bag, mix the flour with all of the spices. Put the chicken in the bag a few pieces at a time and coat well.
-
3Put about 1/4" of oil in a deep frying pan and fry at medium heat until the chicken is browned well, turning about 3-4 times. This takes practice to know when it is done (juices run clear) When I am making a lot of chicken I put it in the oven, after it has been browned, at about 250 to keep warm. If you are cooking chicken with bones in, cooking time will take longer.

4To make gravy, drain the oil off if there is a lot, leaving about 2 Tbls. Let's say you are going to make 2 cups of gravy.-(1Tbls of flour per cup of gravy) Add about 2 Tbls of flour to drippings. There should be enough oil and drippings to make the flour moist(if not add 1 Tbls of butter) By the way, this is called a rue. Cook about 1 minute. Take off heat and let cool just for a small amount of time. Add 1 1/2 cups of water, stirring constantly. Add milk until you have the consistency you want. Add salt and pepper to taste. Cook on medium low for about 5 minutes, stirring occasionally.
