g.f. dark chocolate chunk coconut oat banana bread
This soft and hearty banana bread can be vegan and is gluten-free and refined sugar free. It makes the perfect snack or breakfast on the go. Make sure to use very ripe bananas with lots of dark spots to ensure a lovely sweet bread. This bread keeps for up to five days in a tightly sealed contained or frozen in the freezer for up to a month.

Ingredients For g.f. dark chocolate chunk coconut oat banana bread

3 coats (for oat flour - 2 cups oat flour)

1/2 cshredded coconut (unsweetened)

1/2 tspsea salt

1/2 tspbaking soda

2 tspbaking powder
-
1 1/2 tspcinnamon (optional)

1egg or flax egg (1 tbsp flax + 3 tbsp water)

3very ripe medium sized bananas
-
1/4 cagave syrup/honey
-
1 Tbspapple cider or white vinegar
-
1/2 capplesauce (unsweetened is preferable)

1 Tbspmelted coconut oil
-
1/3 cdark chocolate chips
-
1 Tbspoats, shredded coconut, dark chocolate chunks for sprinkling on top (or to taste)
How To Make g.f. dark chocolate chunk coconut oat banana bread

1Pre-heat oven to 350f or 180c and grease a loaf pan with coconut oil or non-stick cooking spray.

2If using this option: make flax egg by mixing 1 tbsp flax with three tbsp of water, stir, and leave to sit until the mixture turns into an egg like gel.

3Make Oat Flour in blender by blending together 3 cups of oats until a fine oat flour is formed. Measure out 2 cups of Oat Flour (you will have a bit left over)

4Add and mix Dry ingredients in a medium sized bowl,

5Thoroughly mash bananas in a large sized bowl. Add and mix wet ingredients (mashed banana, flax egg, honey, vinegar, applesauce, coconut oil) altogether.

6Add the dry ingredients into the wet ingredients. Mix and fold in dark chocolate chips until a consistent batter is formed.

7Pour banana bread batter into pan. Decorate with oats, coconut, chocolate chunks. Bake for 35 - 40 minutes until an inserted tooth pick comes out clear. Leave to cool in pan for 5 minutes before transferring to a cooling rack or plate. Leave to cool down before slicing.
