potato & cauliflower soup

This is basically how my Mom made potato soup, but I have altered it by adding cauliflower, so it is a little healthier. I did add the sharp cheddar cheese and parsley to this recipe and of course, nothing was measured. I tried to measure for you, but you will need to add salt, pepper, cheese to your own taste. Also, you could make it fully a potato soup by using 6 potatoes instead of the 3. Enjoy!

Ingredients For potato & cauliflower soup

    potatoes, peeled and cut up into chunks
  • 2 c
    cauliflower, very small pieces
  • 1/2
    onion, diced
  • 2 Tbsp
    butter
  • 3 Tbsp
    flour
  • 1/2 c
    sharp cheddar cheese, shredded
  • 3 c
    milk
  • 1 Tbsp
    parsley flakes
  • salt and pepper
  • paprika

How To Make potato & cauliflower soup

    Put the cut up potatoes and onions in a 2 qt pan, cover with water, add about 1/2 tsp of salt, cover with lid, bring to a boil, then simmer until potato is tender, about 10 minutes. Do not drain. Add the cauliflower.

    Put the flour into a small bowl, add milk slowly until mixed together(this is a slurry). Mix into the potato and cauliflower mixture. Add enough milk until it is the consistency you like. Add the cheese, butter, salt and pepper to taste. Cook on simmer until the cheese is melted and the flour is cooked, stirring occasionally, about 5-10 minutes. Serve immediately with a sprinkle of paprika and cheese on top.
