An employee I worked with brought this recipe in one day and I fell in love with it. I'm not a big fan of spinach and hesitated but I loved these bars. I've been making this for about 13 years now and it still gets raves when I serve them or bring them to someone. Please enjoy.

Ingredients For spinach cheese bars

1 pkgfrozen chopped spinach, thawed and squeeze out excess water (12 oz)

1 cmilk

1 call-purpose flour

1 tspbaking powder

1 tspsalt

1 stickbutter, softened

1 lbMonterey jack cheese, cubed

2 lgeggs
How To Make spinach cheese bars

1Preheat oven to 350 degrees. Beat together the softened butter and eggs.

2Mix in milk, flour, baking powder, and salt.

3Fold in spinach and cheese.

4Spread in a 9x13" pan sprayed with cooking spray.

5Bake in preheated oven for 40-45 minutes. Once baked, cut into small squares to serve. Can be eaten cold.
