I'm always looking for a way to eat squash and this is a great one. It's like spaghetti but better for you.

Have you ever added spaghetti squash to a casserole before? It can raise a few eyebrows at first, but spaghetti squash is truly a wonderful addition to many traditional recipes. This particular casserole has a distinctly Italian flavor and makes a wonderful side dish. Skeptical or not, this is one we recommend you try.

Ingredients For spaghetti squash casserole

  • 3 1/2 lb
    spaghetti squash
  • 4 md
    tomatoes
  • 1 tsp
    salt
  • pinch
    pepper
  • 3 Tbsp
    olive oil
  • 2 clove
    garlic, minced
  • 1/2 c
    shredded mozzarella cheese
  • 1/4 c
    grated Parmesan cheese
  • 1/4 c
    chopped green onions

How To Make spaghetti squash casserole

  • Remove seeds from a spaghetti squash.

    Preheat oven to 350 degrees F. Cut squash in half. Remove pulp and seeds.
  • Place squash in a baking dish with water and bake.

    Place in pan with cut side down in 1 inch of water. Bake for 45 minutes. Let cool.
  • Cut an x into the tomatoes and drop into boiling water.

    Cut an X on the bottom of each tomato. Drop in boiling water for 30-45 seconds.
  • Place tomatoes in an ice bath.

    Remove and place in ice bath.
  • Peel, core, and chop tomatoes.

  • Separate the strands of spaghetti squash.

    Use a fork to separate the spaghetti squash strands.
  • Place spaghetti squash and tomatoes in a baking dish.

    Place spaghetti-like strands in a casserole dish and add tomatoes. Sprinkle with salt and pepper.
  • Saute olive oil and garlic.

    Saute garlic in olive oil. Then toss with tomatoes and squash.
  • Add cheese and green onions. Bake.

    Top with mozzarella, Parmesan, and green onions. Bake for 30 minutes.
