Blue Ribbon Recipe

Easy, easy, easy weeknight casserole recipe. Once you brown the beef, everything else is a breeze. Thanks to the soy sauce and rice it has an Asian feel. Fresh onions and celery add tons of flavor and texture to this hearty casserole. We loved the addition of mushrooms but they can easily be left out if you're not a fan. This may not be the prettiest dish when served. But, one bite and it will be on your regular dinner menu.

Ingredients For chinese-style hamburger casserole

  • 1 lb
    ground beef
  • 1 lg
    onion, chopped
  • 1 c
    celery, sliced
  • 1 can
    cream of mushroom soup (or cream of chicken soup)
  • 1 c
    warm water
  • 1/2 c
    rice, uncooked
  • pepper, to taste
  • 1 can
    mushrooms, undrained (4 oz)
  • 1/4 c
    soy sauce

Soy sauce does add a bit of salt to this casserole. If you are sensitive to salt, we recommend using a low-sodium soy sauce.
  • Browning ground beef.

    Brown meat; drain.
  • Remaining ingredients added to the skillet.

    Mix meat and remaining ingredients together.
  • Ingredients poured into a baking dish.

    Place in a 2-quart casserole dish. (Dish may be sprayed with cooking spray.)
  • Casserole covered and baking in the oven.

    Cover and bake for about 1 1/2 hours at a 325 degree oven. (I uncover during the last 15 minutes). Bake until rice is done. Ovens may vary.
