I went out to a local restaurant one day and ordered this, and it left me wanting more! About a week later, I decided to perfect it and it came out just as good or better than the restaurant chef's recipe! (Well, that's my humble opinion!)

Robyn was accurate in naming this chicken recipe - it really is awesome! The flavor of all the fresh veggies cooked down with the chicken is fantastic. Melting on your favorite cheese just brings this easy, make-ahead meal to a whole new level. We used pepper jack and loved the spice, but use your favorite. It's a great low-carb way to prepare a plain chicken breast.

Ingredients For awesome smothered chicken

3 Tbspcooking oil (I use canola)

2 Tbspbutter
-
8 ozfresh sliced mushrooms
-
1green pepper, chopped
-
1/2 cchopped onion
-
minced garlic or garlic powder, to taste

6boneless chicken breasts
-
salt, pepper, and desired seasonings to taste

your favorite shredded or sliced cheese (cheddar, muenster, or pepper jack are my favorites)

Test Kitchen Tips
We opted to saute the veggies, remove them from the pan, cook the chicken, and then put the veggies back into the pan to ensure the chicken was cooked through.

1Heat the cooking oil and butter in a large skillet. Add the mushrooms, green pepper, onion, and garlic and saute until tender. Remove from the pan.

2Flatten the chicken, if desired; sprinkle with salt, pepper, and desired seasonings.

3Place the chicken into the pan.

4Cover with the vegetables and let simmer until chicken is cooked through.

5Note: You can also remove the vegetables while you're cooking the chicken and then when chicken is done, simply throw everything back onto the tops of chicken breasts.

6Add the cheese.

7Cover with a lid just long enough to melt the cheese down through the vegetables and onto the chicken. (My favorite cheese to use is the pepper jack.)

8Serve with your favorite sides. Do not freeze.

9Note: You could also try grilling the chicken on the outdoor grill and simply making the vegetables as in the recipe.
