This is a wonderful and refreshing side dish that is perfect for any summer occasion. The mint and basil gives this simple dish a very tasty and pleasant surprise.

A unique and refreshing take on fruit salad. This delicious fruit salad has a mixture of sweet and tart flavors that are dressed in sugar, vanilla, chopped mint, and basil. The sugar macerates in the fruit creating a glaze. We loved the mint and basil flavor that developed. A sprinkling of coconut gives the salad a creamy flavor. Yum!

Ingredients For robin's fresh fruit salad

1 cfresh green seedless grapes

1 cfresh red seedless grapes

2 cfresh cantaloupe
-
2 cfresh honeydew melon

2 cfresh pineapple chunks

3 cwatermelon

2 cred apples
-
1lemon, juiced

1/4 csugar
-
1 ozfresh mint, chopped

1 ozfresh basil, chopped

2 tspvanilla extract
-
4 ozshaved coconut
-
whipped cream
How To Make robin's fresh fruit salad

1Peel the apples and cut them into bite-sized pieces. Place into a bowl of water with the juice of the lemon to keep from browning and set aside.

2Remove the grapes from the stems and set them aside.

3Cut all the remaining fruit into bite-sized pieces and place them into a large bowl.

4Drain the apples and combine all of the cut fruit.

5Add the sugar, mint, basil, vanilla, and optional coconut. Gently toss.

6Refrigerate for at least 1 hour.

7Serve in a bowl and top with a dollop of whipped cream.
