I call this Christmas Hominy because, for some reason, I only make it during the Christmas season - for potlucks at work or for our Christmas Eve buffet. Yummy, cheesy, always gets rave reviews! Even folks who say, "I hate hominy!" love this dish.

Those who love hominy will fall in love with this casserole. Hominy has a similar flavor to grits or corn tortillas. Creamy cottage cheese and shredded Colby Jack cheese create a wonderful sauce. Green chilies add flavor and a touch of heat to this side dish. It will be a great addition to your holiday table.

Ingredients For christmas hominy

  • 2 can
    white hominy, drained (15.5 oz each)
  • 2 can
    yellow hominy, drained (15.5 oz each)
  • 16 oz
    small curd cottage cheese
  • 2 can
    chopped green chiles (4 oz each)
  • 8 oz
    shredded cheese, cheddar or Colby Jack
  • salt and pepper, to taste

How To Make christmas hominy

  • Combine ingredients in a bowl.

    Preheat oven to 350 degrees F. In a large mixing bowl, add all ingredients together and mix well.
  • Add the mixture to a greased casserole dish.

    Grease a 9x13 casserole dish (glass or ceramic) with cooking spray. Pour the mixture into the dish.
  • Bake the casserole.

    Bake in a 350 degree oven for 40 - 50 minutes. It should be bubbling in the middle.
  • Cool slightly and then serve.

    Allow to cool for about 10 minutes so the sauce thickens a little. Then serve warm.
