These oatmeal cookies intrigued us. The fruit and white chocolate chips caught our eye. One bite and we were hooked. This chewy cookie has flavors of a traditional oatmeal cookie, but then you get pops of sweetness from the fruit. If you can't find dried peaches, apricots are a great substitute. You could also swap other fruits like dried blueberries.

Ingredients For peaches & cream oatmeal cookies

3/4 call purpose flour

1/2 tspbaking soda

1 pinchsalt

1/4 clight brown sugar

1/4 cdark brown sugar

1 lgegg
-
1 1/2 crolled oats
-
1/2 cchopped dried peaches
-
1/2 cchopped walnuts
-
1/2 cwhite chocolate chips

1/2 cbutter
How To Make peaches & cream oatmeal cookies

1Preheat the oven to 350 degrees with the racks in the upper and lower thirds of the oven.

2In a small bowl, whisk together flour, baking soda, and salt.

3In a stand mixer fitted with the paddle attachment, cream butter and sugars until light and fluffy. Slowly add egg and continue mixing.

4Slowly add flour mixture, oats, peaches, walnuts, and white chocolate chips. Mix until combined.

5Line 2 sheet trays with parchment paper. With wet hands make 20 balls from the dough placing evenly among sheet trays. Press down on cookie dough with the palm of your hand to make a flat circle.

6Bake for 10 to 12 minutes or until golden and still a bit tender in the center. Remove from oven and let sit on sheet trays for 1 minute. Remove to cooling racks to cool completely.

7You can use just about any kind of dried fruit in these.
