The Okanagan Valley is known as "The Fruit Basket" of Canada. Most all fruit we get here is grown in the Okanagan. If you only make one muffin in your life, this should be the one!!!! *Any type of apple can be used.

This recipe will make your house smell absolutely scrumptious! With a perfectly sweet taste and a delightfully crunchy topping, these light muffins are Blue Ribbon winners indeed.

Ingredients For okanagan apple muffins

  • 1/2 c
    brown sugar, firmly packed
  • 6 Tbsp
    all purpose flour
  • 1/4 c
    butter, unsalted
  • 1 tsp
    cinnamon
  • 1 1/2 c
    brown sugar, firmly packed
  • 2/3 c
    vegetable oil
  • 1 lg
    egg
  • 1 tsp
    vanilla extract
  • 1 c
    water
  • 2 tsp
    apple cider vinegar
  • 2 1/2 c
    all purpose flour
  • 1 tsp
    baking soda
  • 1/2 tsp
    salt
  • 2 c
    peeled apples, diced into 1/2 inch chunks

How To Make okanagan apple muffins

    Preheat oven to 325. Butter and flour or line a 15 cup muffin tin with paper cups.

    Make the topping: Combine the first 4 ingredients in a bowl. Mix with fingers until crumbly. Set aside.

    Beat the 1 1/2 cups brown sugar oil, egg, and vanilla in a large bowl.

    Combine the water and vinegar. Sift together flour, soda and salt and blend into the oil mixture alternately with the water.

    Add the diced apples and mix just until combined.

    Spoon into muffin pan and sprinkle with topping.

    Bake 30 mins until golden brown and top springs back when lightly touched.
