Ingredients For okanagan apple muffins

1/2 cbrown sugar, firmly packed

6 Tbspall purpose flour

1/4 cbutter, unsalted

1 tspcinnamon

1 1/2 cbrown sugar, firmly packed

2/3 cvegetable oil
-
1 lgegg
-
1 tspvanilla extract
-
1 cwater
-
2 tspapple cider vinegar
-
2 1/2 call purpose flour
-
1 tspbaking soda
-
1/2 tspsalt
-
2 cpeeled apples, diced into 1/2 inch chunks
How To Make okanagan apple muffins

1Preheat oven to 325. Butter and flour or line a 15 cup muffin tin with paper cups.

2Make the topping: Combine the first 4 ingredients in a bowl. Mix with fingers until crumbly. Set aside.

3Beat the 1 1/2 cups brown sugar oil, egg, and vanilla in a large bowl.

4Combine the water and vinegar. Sift together flour, soda and salt and blend into the oil mixture alternately with the water.

5Add the diced apples and mix just until combined.

6Spoon into muffin pan and sprinkle with topping.

7Bake 30 mins until golden brown and top springs back when lightly touched.
