I love avocados!!! So why not have a nice refreshing avocado salad? You can also use tomatoes as it did.

Light and refreshing, this avocado citrus salad is simple to make. The salad has creamy avocado and orange wedges to add bright flavor. With a little bite, red onions are a nice contrast. Sweet and tangy, the dressing is the perfect complement to all the flavors. A delicious salad for a light meal on a hot day. This would be a great side salad with grilled fish or chicken, too.

Ingredients For avocado citrus salad

  • DRESSING
  • 2 Tbsp
    sugar
  • 2
    limes
  • dash of salt
  • 2 Tbsp
    vegetable oil
  • SALAD
  • 1 lg
    firm, ripe avocado, peeled, seeded and sliced
  • 2 c
    torn romaine lettuce
  • 1 lg
    orange, peeled and cut into sections
  • 1/4 sm
    red onion, sliced into thin wedges
  • 2 Tbsp
    snipped fresh cilantro (optional)

How To Make avocado citrus salad

  • Lime zest and juice, sugar, salt, and oil for the dressing in a bowl.

    For the dressing, zest limes to measure 1 teaspoon zest; juice limes to measure 1/4 cup juice. Place zest and juice in a small bowl. Add sugar, salt, and oil; whisk until blended. Cover. Refrigerate until ready to use.
  • Slicing the avocado.

    For the salad, cut an avocado in half lengthwise. Remove the pit and cut flesh away from the skin. Cut avocado into slices.
  • Cutting the orange into segments.

    Peel and section oranges.
  • Thinly slicing red onion.

    Slice red onion into thin wedges.
  • Drizzling dressing over the arranged salad.

    Arrange lettuce, avocado slices, orange sections, and onion on small plates. Drizzle with dressing. Sprinkle with cilantro, if desired.
