This is my mother-in-law's recipe for Sausage Stuffing. The greatest thing is the flexibility -- you can add green pepper if that's your thing, you can use different herbs, etc. And when you are making many dishes in the oven for a holiday meal, this dish bakes at whatever temperature you are using and can sit in the oven while everything else finishes if you cover it.

1 lbpork sausage

3/4 conions, minced

1/2 ccelery, chopped

1 tspsalt

1 tsppepper

1 Tbspsage, dried

12 cbread, cubed or torn into small pieces

3eggs

1 cchicken broth
How To Make mom m's sausage stuffing

1Preheat oven to 375 degrees (or whatever temperature you are using for other dishes in oven).

2Butter or lightly oil a 9 x 13 inch baking pan/dish.

3Brown sausage, remove from pan.

4In same pan, saute onions until translucent.

5Beat eggs and chicken broth in a medium bowl.

6Mix sausage, onions, egg mix and all other ingredients in a very large bowl. Add more broth if it seems dry -- it should be fairly damp to the touch.

7Put all ingredients in baking pan/dish. Place in oven and check after 30 minutes. Cover with foil if it starts to get dry or too brown on top. Continue to bake for 15 - 30 minutes more.
