This recipe was given to me long ago, and it has been passed around for years. All my friends and family love it. I usually double my ingredients so we can have it again or share. I have added a few extras to this recipe. I use a mixture of evaporated milk and regular milk combined, and a pinch of cinnamon and nutmeg when the pudding has cooled. Top with whipped cream if desired.

Ingredients

  • 1 cup salted water
  • 1/2 cup rice uncooked
  • 1 quart milk
  • 1/2 stick butter
  • 3 large eggs
  • 1/2 cup granulated sugar
  • 1/2 cup raisins
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground nutmeg, if desired
  • 1 teaspoon ground cinnamon, if desired

So you don't end up with scrambled eggs, when adding the egg mixture, add the eggs slowly and stir briskly.
  • Add rice to boiling water.
    Step 1
    Using a large heavy pan, bring water to a boil. Sprinkle rice slowly into the boiling water and do not stir.
  • Lower the heat, add a cover, and cook the rice.
    Step 2
    Lower the heat, cover the pan, and cook for 7 minutes.
  • Add milk and butter and stir with a fork.
