stovetop rice pudding
This recipe was given to me long ago, and it has been passed around for years. All my friends and family love it. I usually double my ingredients so we can have it again or share. I have added a few extras to this recipe. I use a mixture of evaporated milk and regular milk combined, and a pinch of cinnamon and nutmeg when the pudding has cooled. Top with whipped cream if desired.

Ingredients
- 1 cup salted water
- 1/2 cup rice uncooked
- 1 quart milk
- 1/2 stick butter
- 3 large eggs
- 1/2 cup granulated sugar
- 1/2 cup raisins
- 1 teaspoon vanilla extract
- 1 teaspoon ground nutmeg, if desired
- 1 teaspoon ground cinnamon, if desired

So you don't end up with scrambled eggs, when adding the egg mixture, add the eggs slowly and stir briskly.

Step 1Using a large heavy pan, bring water to a boil. Sprinkle rice slowly into the boiling water and do not stir.

Step 2Lower the heat, cover the pan, and cook for 7 minutes.

Step 3Add milk and butter, and stir with a fork.

Step 4Bring rice to a boil and cook over low heat for 1 hour.

Step 5Beat eggs. Then add sugar, raisins, vanilla extract, and spices (if using) to the egg mixture.

Step 6Slowly pour eggs into the rice, stirring until it starts to thicken. The pudding will be nice and thick after it has cooled.
