This is one of my favorite salads. It is refreshingly different than your typical salad.

Blue Ribbon Recipe

Cyndi's mandarin salad is a great addition to any summer meal. The recipe doesn't make a whole lot of dressing, so we recommend at least doubling it... sweet and tangy, it's that good. Celery and sliced almonds add a nice crunch. A very simple summer salad that will be great for lunch or alongside grilled burgers, steak, or chicken.

Ingredients For mandarin salad

  • 1 c
    sliced almonds
  • 4 Tbsp
    sugar
  • 3
    heads of romaine lettuce
  • 2
    green onions
  • 1 c
    celery, sliced
  • 1 can
    mandarin oranges, drained (11 oz)
  • DRESSING
  • 1/2 tsp
    salt
  • dash
    pepper
  • 1/4 c
    vegetable oil
  • 2 Tbsp
    vinegar
  • 2 Tbsp
    sugar
  • 1 Tbsp
    parsley, chopped

How To Make mandarin salad

  • Dressing ingredients in a measuring cup.

    Mix all dressing ingredients together and chill in the refrigerator.
  • Browning almonds with sugar.

    In a small pan, over medium heat, cook almonds and sugar, stirring constantly, until almonds are coated and sugar is dissolved. Watch carefully as they burn easily! The almonds should be just a little brown.
  • Lettuce, celery, onion, and oranges added to a bowl with dressing and almonds.

    Mix lettuce, celery, and onion. Just before serving, add oranges and almonds. Toss with dressing.
