I took this to our monthly ladies luncheon and it was a hit with the ladies AND the kids. VERY little mayonnaise (I don't care for mayo much so I always like recipes that have little or none but still tastes great). It was awesome for a hot summer "don't use the oven" day.

Oh what a good combination - lime juice, cumin, and cilantro are so good together. This salad would be wonderful on a hot summer day or, in our opinion, any day! A great recipe if you're hosting a girls lunch or looking for a light dinner.

Ingredients For cilantro lime seafood salad (in an avocado boat)

  • 1/2 lb
    cooked, peeled shrimp cut into bite size chunks
  • 1/2 lb
    imitation crab meat chopped into bite size chunks (you can use fresh if you wanna go to the trouble, but not canned)
  • 2 Tbsp
    chopped fresh cilantro
  • 2 Tbsp
    chopped fresh Italian parsley
  • 2 Tbsp
    fresh lime juice
  • 1 tsp
    cumin
  • 1/2 tsp
    ground or super finely chopped lime peel
  • 3
    fresh avocados
  • extra lime juice to squeeze onto avocados
  • 3 Tbsp
    mayonaise

How To Make cilantro lime seafood salad (in an avocado boat)

    Stir mayo, juices, peel and all spices together in a bowl to mix well.

    Add crab and shrimp and stir till well coated.

    Cut avocados in half, remove pit, run a spoon around the peel to make it easier to eat, sprinkle well with lime juice, salt and pepper (I also LOVE the GREEN Tabasco sauce for this step but it is optional).

    Load avocados with the salad mixture and enjoy! These are SOOOOOOO easy and taste GREAT!
