This recipe was found in a catalog next to a promoted waffle maker. It sounded so good I had to try it out. While caring for my mother during the final years of her life these waffles were one of her favorite breakfast requests. I altered this recipe into also making 2-3 pancakes as this recipe makes 8 4-1/2 inch waffles: pancakes will be listed at the bottom of this waffle recipe.

Ingredients For buttermilk waffles with grilled fruit - to die for

  • 3 lg
    eggs, separated
  • 1 1/2 c
    buttermilk
  • 8 Tbsp
    (1 stick) unsalted butter - melted
  • 1/2 tsp
    vanilla extract
  • 1 1/2 c
    all-purpose flour
  • 1 1/2 tsp
    baking powder
  • 1 tsp
    baking soda
  • 1/4 tsp
    salt
  • 3 Tbsp
    granulated sugar
  • HAVE ALL INGREDIENTS AT ROOM TEMPERATURE. PREHEAT BELGIAN WAFFLE MAKER.

    fruit: banana, peaches, or nectarines cut into 1/2 inch slices
  • 3 Tbsp
    honey
  • 3/4 c
    plain yogurt

How To Make buttermilk waffles with grilled fruit - to die for

    In large bowl, whisk egg yolks. Whisk in buttermilk, butter and vanilla. Over sheet of waxed paper sift together flour, baking powder, baking soda, salt and sugar.

    Add dry ingredients with yolk mixture: whisk until smooth.

    In another bowl, whisk egg whites until stiff peaks form.

    Fold half of whites into batter, then fold in remaining whites. This is the key to making fluffy waffles. Cook waffles: keep warm in 200 degree oven

    Preheat grill pan over medium heat. Grill fruit if desirerd, turning once, until tender, 4-5 minutes total. Transfer to plate; drizzle with honey. Place 2 waffle squares on each plate: top with fruit and yogurt.

    2-3 BUTTERMILK PANCAKES:
    1 egg
    1/2 c. buttermilk
    2 3/4 T. soft butter
    1/3 t. vanilla
    3/4 c. flour
    1/3 t. baking soda
    pinch salt
    1 T. sugar
    COMBINE ALL INGREDIENTS AND COOK AS PANCAKES ON PREHEATED GRIDDLE.
