My hubby doesn't care for cauliflower, so I get to make a small casserole dish of this all for myself! I have this when he has his peas (ugh). I think he got the short end of that deal! This is simply wonderful, and when having company, even the kids enjoy it. (Gotta be the cheese!) Hope you enjoy it too.

Ingredients For glorious baked cheese cauliflower

1 lghead of cauliflower, cut into florets
- SAUCE
-
4 Tbspbutter (1/2 stick)

1/4 call-purpose flour

1/2 tspsalt
-
1/8 tsppepper
-
2 cmilk
-
1/2 - 1 Tbspregular or Dijon mustard, to taste

1 1/2 cextra sharp cheddar cheese, grated (6 oz. block)
- TOPPING
-
1 csoft fresh bread crumbs
-
1 Tbspfresh chopped parsley
-
1/2 tsppaprika
-
2 Tbspmelted butter
-
pinchsalt

Test Kitchen Tips
We made our soft bread crumbs by running a few pieces of bread in a food processor until it resembled bread crumbs.

1Boil or steam cauliflower in water until just tender, about 6 to 8 minutes. Drain and set aside.

2Grease a 2-quart baking dish. Heat oven to 350 F.

3In a medium saucepan, heat butter over medium heat. Add flour. Stir until smooth and just bubbly.

4Add salt, pepper, and milk.

5Cook the sauce, stirring, until thickened and bubbly.

6Add the mustard and cheese. Continue cooking, stirring, until the cheese is melted.

7Combine the cauliflower with sauce.

8Spoon into the prepared baking dish.

9Combine the topping ingredients and sprinkle over the cauliflower mixture.

10Bake in the lower half of the oven so the top doesn't over brown. Bake for 15 to 20 minutes until the casserole is bubbly and the topping is browned.
