This wonderful recipe was my husband’s Hungarian grandma’s recipe. She would lovingly make them whenever the holiday season rolled around. So then after she passed away, I wanted to carry on her holiday tradition of making these yummy rolls for our family. One year I decided to try something different to change things up a bit when the holidays rolled around. But my husband’s father was so disappointed that year when he learned that I had not made any that I vowed never again to break this family tradition — that was over 20 years ago now and I haven’t since!

These Hungarian nut rolls will be a nice addition to your holiday baking and make wonderful gifts. The dough is easy to work with and forgiving. A novice baker can prepare this recipe. When baked, the rolls have a scrumptious caramel apple spiced walnut filling. The icing drizzle adds just the right amount of sweetness and a little moisture. We love the tradition behind this recipe too.

Ingredients For hungarian nut rolls

  • NUT FILLING INGREDIENTS
  • 1-2 lb
    nuts, ground (about 1 1/2 lbs walnuts, 1/2 lbs pecans)
  • 2 1/2 c
    granulated sugar
  • 2 lg
    eggs
  • 1 lg
    apple, grated
  • 3/4 - 1 tsp
    ground cinnamon
  • 2 stick
    butter, melted
  • DOUGH INGREDIENTS
  • 2 pkg
    dry yeast (or 2 yeast cakes)
  • 1/2 c
    warm milk
  • 6 - 6 1/2 c
    sifted all-purpose flour
  • 6 Tbsp
    granulated sugar
  • 3/4 tsp
    salt
  • 1 c
    sour cream
  • 3 lg
    eggs, beaten
  • 2 stick
    butter, melted or very soft
  • ICING INGREDIENTS
  • 2 c
    confectioners' sugar
  • 2-3 Tbsp
    milk

Because it uses twice as much yeast as a usual bread recipe, it will take longer for the yeast to dissolve. Ours took 20 minutes. After the first pan of rolls, set a timer for 1 hour. After 30 minutes, start to work on the second set of rolls. That way the time the rolls are prepped, risen, and baked is staggered.
  • Nut filling ingredients, except butter, in a bowl.

    Instructions for making nut filling: Combine all ingredients except the butter.
  • Stir in melted butter and heat in a saucepan.

    Add the melted butter and mix well. Heat mixture in a large saucepan over medium heat until the ingredients blend well and thicken slightly, about 8 - 10 minutes. This makes more filling than enough filling for the Hungarian Nut Rolls. You can freeze any extra and use it as a topping for an apple pie, top baked sweet potatoes, or use it in a coffee cake recipe.

  • Divide dough into 4 - 6 balls.

    Divide dough into 4 or 6 parts depending on the length of nut roll wanted. This will make 4 - 6 loaves.
  • Roll out the dough.

  • Spread the cooled nut filling.

  • Place on a baking sheet, loosely cover with plastic wrap, and let rise.

    Place the sealed portion down on a parchment paper-lined baking sheet. Loosely cover with plastic wrap. Let rise for 1 hour or until it has doubled in size. Begin to preheat the oven to 350 degrees F.
  • Bake the Hungarian Nut Rolls.

    Bake in a 350 degree F oven for 30 to 40 minutes.
  • Baked Hungarian Nut Rolls cooling.

    Remove from the oven and prepare the icing.
  • Combine milk and confectioners' sugar.

    Prepare the icing by combining confectioners' sugar and milk. Slowly add milk until you get a drizzle consistency.
  • Drizzle icing over the nut rolls.
