I created this recipe using the flavors of blueberry and honey. The mascarpone cheese adds great texture to the inside of each slice.

Elevate breakfast or brunch with this honey blueberry stuffed French toast. The crushed honey nut shredded wheat cereal outer layer adds tons of flavor and texture. Inside, mascarpone cheese and blueberries are combined for a smooth and semi-sweet filling. All the flavors balance each other out and create the most amazing French toast. Try this stuffed French toast with other types of fruit too!

Ingredients For honey blueberry stuffed french toast

  • 3 c
    Post Honey Nut Shredded Wheat
  • 1 tsp
    cinnamon
  • 1 tsp
    nutmeg
  • 12 slice
    French bread or largely sliced Pullman bread
  • 6
    eggs
  • 3/4 c
    buttermilk
  • 2 tsp
    vanilla
  • 1 c
    blueberries
  • 8 oz
    mascarpone cheese
  • 4 Tbsp
    honey
  • 4 Tbsp
    butter

How To Make honey blueberry stuffed french toast

  • Pulsing shredded wheat cereal.

    Place the shredded wheat in a food processor and pulse until the consistency of coarse crumbs.
  • Adding spices to the shredded wheat crumbs.

    Add cinnamon and nutmeg to the shredded wheat. Mix together and set aside in a small baking dish.
  • Buttermilk and vanilla extract added to beaten eggs.

    In a mixing bowl, beat eggs. Add buttermilk and vanilla. Pour into a large baking dish.
  • Mascarpone cheese, vanilla, honey, and blueberries in a bowl.

    In another mixing bowl, mix mascarpone cheese, remaining 1 tsp vanilla, honey, and blueberries. Place into a piping bag and cut off the tip.
  • Piping mascarpone mixture into slit in bread.

    Cut slit at bottom of a piece of bread and pipe cheese mixture into bread slice.
  • Dipping bread into egg mixture and cereal crumbs.

    Dip the slice of bread into the beaten egg mixture and then into shredded wheat mixture.
  • A platter of Honey Blueberry Stuffed French Toast.

    Cook on a buttered skillet for 3 minutes and then gently flip over and continue cooking for 3 minutes. Repeat until all 12 slices of bread are used. Transfer to the serving dish and top with your favorite syrup.
