This grits breakfast bake is a hearty breakfast casserole. It has thick and creamy grits on the bottom and is packed with smoky sausage. Then, it's topped with a layer of fluffy eggs and cheddar cheese. We imagine this being just as divine with any number of cheese combinations. A delicious breakfast option for a weekend or holiday breakfast.

Ingredients For grits breakfast bake

  • 2 1/2 c
    water
  • 3/4 c
    quick grits
  • 1 lb
    skinless smoked sausage
  • 1 1/2 c
    shredded sharp cheddar cheese, shredded
  • 6 lg
    eggs
  • 1 can
    evaporated milk (12 oz)
  • 1 tsp
    dry mustard
  • 1 1/2 tsp
    salt
  • 1/2 tsp
    pepper
  • 1 - 2 md
    tomatoes, sliced
  • 2 Tbsp
    chopped parsley

How To Make grits breakfast bake

  • Grease a 9x13 baking dish.

    Heat oven to 325 degrees F. Grease a 9X13 dish.
  • Add grits and salt to boiling water.

    Bring water to a boil. Add 1 tsp salt and slowly stir in grits.
  • Simmer the grits.

    Reduce heat. Simmer for 4-5 minutes until thickened stirring frequently.
  • Stir in cheese and sausage.

    Stir in chopped smoked sausage and half of the sharp cheese.
  • Add to a baking dish and top with cheese.

    Spoon into the dish and sprinkle with the remaining cheese.
  • Scramble eggs, evaporated milk, and spices.

  • Pour over the grits mixture and bake.

    Pour over the grits mixture. Bake for 50 - 60 minutes or until a knife inserted 1 1/2 inches from the side comes out clean.
  • Top with parsley and sliced tomato.

    Let stand for 10-15 minutes. Garnish with tomato and parsley.
