Ingredients For fiesta rice salad

  • 1 can
    black beans, rinsed & drained
  • 2 c
    cooked brown rice
  • 1
    red or yellow bell pepper, chopped
  • 1
    green pepper, chopped
  • 2
    stalks celery, chopped
  • 3-4
    scallions, sliced
  • 1 c
    fresh cilantro, chopped
  • 3/4 c
    salsa
  • 1/3 c
    italian dressing
  • juice of 1 lime
  • 1 tsp
    cumin

How To Make fiesta rice salad

  • 1
    Put rice in a mixing bowl (rice should not be warm, let it cool completely or refrigerate to cool if necessary).

    Add all other ingredients and mix thoroughly.

    Refrigerate for 1 hour & serve.
