Ingredients For fiesta rice salad

1 canblack beans, rinsed & drained

2 ccooked brown rice

1red or yellow bell pepper, chopped

1green pepper, chopped

2stalks celery, chopped

3-4scallions, sliced

1 cfresh cilantro, chopped

3/4 csalsa
-
1/3 citalian dressing
-
juice of 1 lime
-
1 tspcumin
How To Make fiesta rice salad

1Put rice in a mixing bowl (rice should not be warm, let it cool completely or refrigerate to cool if necessary).

2Add all other ingredients and mix thoroughly.

3Refrigerate for 1 hour & serve.
