I bought myself a new Popsicle maker and decided to try it out. With this heat wave we are having these are going to hit the spot! Each popsicle holds 1/2 cup and all together the 6 moulds hold 3 cups. These aren't sweet, so if you want them sweeter add in some honey.

Round up the kids (young and old!) and get them involved in making these simple and delicious warm-weather treats. Despite all the coconut in the ingredients, the finished pops have just a hint of coconut flavor... perfectly refreshing!

Ingredients For easy strawberry popsicles

  • 1 pt
    organic strawberries (divided)
  • 1
    6 oz. container raspberry coconut yogurt
  • 1 tsp
    vanilla extract
  • 2/3 c
    plain coconut milk creamer

If you have trouble finding coconut raspberry yogurt as we did, you can simply mix plain raspberry and plain coconut yogurt together to get the same effect.

    Remove 6 medium sized dark red strawberries from the pint of strawberries. Save them for later.

    Process the strawberries, yogurt, vanilla and coconut milk creamer (like coffee creamer but made from coconut milk) in a blender until smooth.

    Remove to a 4 cup pitcher and chop up the remaining strawberries fairly small and add them into the liquid. Give it a good stir with a spoon.

    Pour into your Popsicle holders and place in the freezer for at least 3 hours or until frozen through.
