Fluffy and creamy, these green chile cheese bars are perfect any time of the day. With the texture of a breakfast casserole, the flavor reminds us of a spicy cornbread. Enjoy them for brunch, a snack, or even an appetizer.

Ingredients For green chile cheese squares

  • 1 stick
    butter or margarine
  • 10
    eggs, slightly beaten
  • 1/2 c
    all-purpose flour
  • 1 tsp
    baking powder
  • 1/2 tsp
    salt
  • 1 c
    chopped green chiles (canned is ok)
  • 1 pt
    small curd cottage cheese (2 cups)
  • 8 oz
    cheddar, shredded
  • 8 oz
    Monterey Jack cheese, shredded

How To Make green chile cheese squares

  • Melted butter cooling in a bowl.

    Melt butter and cool.
  • Beating eggs and butter together.

    Pour into a large bowl; add eggs, beating slightly.
  • Remaining ingredients added to the mixing bowl.

    Add in all other ingredients and mix well.
  • Batter poured into a baking dish.

    Pour into a buttered 13" x 9" x 2" pan.
  • Chile Cheese Squares baking in the oven.

    Bake at 400 degrees for 15 minutes - THEN lower to 350 degrees for 30 minutes.
