This is my absolute favorite way to prepare and serve cabbage. The only downfall to this recipe is that you can't control the heat factor! Depending on the season and whether or not the peppers received rain or not determines how hot or mild your dish is. I only chop 2 jalapenos for this recipe and seed most of them out so the kiddos can get their veggies, too.

Frying cabbage in bacon drippings makes this Southern fried cabbage amazing. They coat the cabbage and help it cook to tender perfection. It's an old-fashioned way to cook cabbage. Adding diced jalapenos makes this recipe slightly different than others. They add a little bit of heat, but it's not overpowering. A delicious side dish.

Ingredients For southern fried cabbage

1head of cabbage

6 slicebacon

1 smonion, chopped

2 smjalapeno peppers, chopped

How To Make southern fried cabbage

1Fry the (6) bacon slices. While bacon fries, core the cabbage. Chop the cabbage and onions. Remove bacon from the pan and set aside on a paper towel to drain.

2Add chopped onions to the bacon drippings in the skillet and saute.

3Add chopped cabbage and stir well coating with onions and bacon drippings. Place lid on cabbage and reduce heat to simmer.

4Deseed the jalapenos and chop. Use more or less if desired. Add jalapenos to the cabbage mixture in the skillet.

5Salt and pepper to taste. I use lots of pepper at this point.

6Add crumbled bacon. Stir together and recover with the lid. The cabbage does not need any water added to the skillet. It will cook down so don't be alarmed if your skillet looks super full. You only need to cook this until tender... you don't want to cook all the nutrients out. Don't forget to stir this well, you don't want any cabbage or onion pieces getting burned left on the bottom.

7Best served hot, but leftovers the next day are delicious as well. Just a bit spicier as the jalapenos have sat. This is a wonderful side dish to just about any meal, but my favorite is meatloaf and brisket!
