The bold flavors in this recipe make for one memorable meal. We chose a combination of pepper jack cheese, jalapeno pepper, chicken and avocado for our first quesadilla at bat... and it was a home run! Before serving, we added pepper jelly, salsa and sour cream to taste. De-lish!

Ingredients For as you like it peppery quesadilla

1 pkgcream cheese

1 jarhot pepper jelly
-
1 pkgmonterey jack cheese with jalapeno peppers

1jalapenos, fresh

2avocados
-
1 pkgcooked chicken pieces

2 pkgflour tortillas

olive oil, extra virgin

1/2 cmayonnaise mixed with chopped cilantro

1 jarmedium salsa
-
8 ozsour cream
-
1 bunchcilantro, chopped
How To Make as you like it peppery quesadilla

1Cut pepper jack cheese into thin slices. Chop cilantro and mix into mayonnaise. Peel and slice avocados. Dice jalapeno. Put each in separate dishes, including sour cream in separate dish (on the side).

2Heat enough oil to cover bottom of skillet. Spread mayo on tortilla and place mayo side-up in skillet. Arrange pepperjack cheese, chicken and avocado on top. Place another tortilla on top. Cook til browned and crispy (about 2 minutes). Flip over, using spatula, and brown other side. Remove from pan and cut into quarters using pizza cutter. Also spread cream cheese and hot pepper jelly; chicken, jalapeno and salsa; or any combination as you like it.
