I got this recipe from a friend who brought it to a pot luck dinner. It was a popular dish.

Is this a cranberry casserole or dessert? Who cares because it's tasty. The filling is sweet and tart. While baking, the cranberries burst and the apples are perfectly soft. On top is a nutty and sweet oat topping that's similar to a crisp. Baked until golden brown, it's delicious. Serve this alone for a side dish or with a bit of whipped cream if serving for dessert. If fresh cranberries are out of season, frozen berries will work well too.

Ingredients For apple-cranberry casserole

  • 3 c
    apples, peeled and chopped
  • 2 c
    raw cranberries
  • 1 1/4 c
    sugar
  • 1 1/2 c
    quick oatmeal (uncooked)
  • 1/2 c
    brown sugar
  • 1/3 c
    all-purpose flour
  • 1/2 c
    pecans, chopped
  • 1/2 c
    margarine or butter, melted

How To Make apple-cranberry casserole

  • Apples, cranberries, and sugar in a baking dish.

    In a 2-quart casserole that has been sprayed with cooking spray, combine apples, cranberries, and sugar.
  • Oats, brown sugar, flour, and pecans in a mixing bowl.

    Mix oats, brown sugar, flour, and pecans in a medium mixing bowl.
  • Pouring melted butter onto oat mixture.

    Pour melted butter on the oat mixture and mix well.
  • Oat mixture poured over apples.

    Top the apple and cranberries with the oat mixture.
  • Apple-cranberry casserole baking in the oven.

    Bake in 350 degree oven for about one hour.
  • Apple-cranberry casserole baked until bubbly.
