I just made this yesterday and the icing is to die for!!! It is inspired by a cake sold at Wegman's grocery store and an icing I saw on this site.

Ingredients For best carrot cake
- PINEAPPLE CREAM CHEESE FROSTING

1 1/2 tsppineapple juice

2 cpowered sugar or confectioners' sugar

1/2 cbutter, softened (1 full stick)

1 tspvanilla extract

16 ozcream cheese, softened
- CARROT CAKE

2 call-purpose flour
-
2 csugar
-
1 tspbaking soda
-
1 tspsalt
-
1/2 tspbaking powder
-
2 tspcinnamon
-
1/2 tspnutmeg
-
1 pinchallspice, ground
-
4eggs
-
1/2 cvegetable oil
-
1 capplesauce, unsweetened

3 ccarrots, grated
-
1 cwalnuts, chopped
-
8 1/2 ozpineapples, crushed

1/4 cgolden raisins
-
1/4 craisins
-
1/4 ccoconut, flaked

Crisco spray with flour
How To Make best carrot cake

1Preheat oven to 350 degrees.

2Mix flour, cinnamon, salt, baking soda, baking powder, nutmeg, and allspice in a bowl.

3In a separate bowl mix oil, applesauce, pineapples, raisins, and coconut.

4Add eggs by hand to dry mix 1 by 1.

5Then using an electric mixer on low setting to add the wet mix to egg mix.

6Then by hand mix in the carrots and walnuts.

7Use some Crisco spray with flour and spray 2 9-inch pans.

8Pour batter into the pans.

9Cook for about 40 mins or until a toothpick comes out clean.

10For the icing, mix the butter and cream cheese with electric mixer.

11Add powdered sugar little by little.

12Once the sugar is in add the pineapple juice and then the vanilla extract.

13Once the cake has cooled, ice the cake.
