I’m a genuinely honest person. I can’t fib with a straight face and would just never even think about trying to be sneaky…. well, except when it comes to peanut butter and chocolate! The Hamburglar may have been overcome by burgers, but it’s sweet, salty PB that I’ve been known to pilfer! No child’s Easter basket or Halloween haul is safe while there’s still peanut butter to be had. I admit it… guilty as charged.
But I’m not alone! There are a lot of us peanut butter pinchers out there – You know who you are – and we just can’t resist the sticky stuff when it’s paired up with its chocolaty cohort.
If you’re anywhere near as nutty for nuts as I am, you must immediately make your way to the kitchen and bake up a batch of Debbie Wright’s Nutter Butter Chocolate Overload Cupcakes. The name really says it all.
“My husband loves chocolate and peanut butter,” smiles Debbie. “Sometimes the simple ideas are the best.”
While the flavors may be wonderfully classic, Debbie’s technique is delightfully creative. By placing a peanut butter cookie in the bottom of each baking tin before spooning in batter, Debbie creates a nutty cookie crust for each mini cake, a trick she first used on her choco-rific Death By Oreo Cupcakes. It’s a pie, a cookie, and a cake in one!
Oh, and how about some brownies? Traci Coleman combines chocolate, peanut butter and CRUNCH in her yummy recipe for Peanut Butter Crunch Brownies.
“The chocolate and peanut butter covered Rice Krispies on top (along with the peanut butter cups) make this brownie recipe rich and amazing!” she exclaims.
Understatement of the century, perhaps? Inspired by a favorite blog, Traci swapped out boxed brownies for her favorite homemade version. She then tops her brownies with the yummiest concoction of peanutty crispy rice treats! Talk about a craving quencher. Each bite is a sensory experience like no other.
No time for baking? Need your fix fast? Have no fear, Deborah Hurtado is here! Her No Bake Peanut Butter Chow Mein Noodle Cookies are a yummy blast from the past. I grew up munching on similar sweets, and they still hold so many wonderful memories.
“This is the first cookie recipe I learned from watching my mother,” says Deborah. “[It’s also] the first one I taught my kids, and now my son Fernando makes it several times a year!”
Similar to a crispy treat, Deborah’s recipe utilizes dry chow mien noodles to achieve the ideal, toothsome crunch. Mix the noodles with melted marshmallow, peanut butter and butterscotch chips, then drop onto wax paper to set. Finish them off with amazing chocolate drizzle and these family-friendly cookies are ready to eat!
“This is a fun recipe a child can make,” says Deborah. “Fun to make AND fun to eat…”
Thanks to these ladies, my honor remains intact. These days I’m leaving the candy for the kiddies and bringing my own peanut butter goodies to the table. When the platter gets empty, I just make more!
