No-Bake Desserts for Summer Entertaining

Lately, it’s been hard for me to catch up with friends because life is busy. But this weekend we all seem to be free, so I’ve decided to have everyone over. We can catch up about what’s going on in our lives, and, of course, snack on something sweet. Since it’s still so hot, no-bake desserts are on the menu.

“This is a salad you can make your own with the fruit and nuts you add,” says Edith James (Wilmington, NC) of her Creamy Fruit Salad. “Be creative!”

While this may be too much for some people, I love the concept. It is almost like a rich and creamy dip made into a fruit salad.

The mixture of fruit is delicious. But, there’s enough creamy sauce you could add more of your favorite types of fruit. The crunch from the walnuts balances out the creamy sauce and adds a touch of savory flavor.

“This Graham Cracker Pudding is a quick and simple dessert my mama used to make when I was young, and I have continued sharing it with my kids,” reveals Erica Freyer (Mocksville, NC).

With all its layers, this version of an eclair cake reminds me of a graham cracker pudding lasagna.

The peanut butter was an added flavor I enjoyed and it also protects the crackers from becoming completely soft. A very thin layer of chocolate pudding on top is the perfect touch.

“This pie only takes about 10 minutes to prepare,” explains Lisa Lynn (Atwater, CA). “I promise you will have the spoons out while you are pouring mousse into your crust!”

Lisa’s right. It’s hard not to dig right into her Heavenly Chocolate Mousse Pie.

Smooth and creamy, it has a crunchy Oreo crust and is very decadent. Full of chocolate goodness, no one will believe how simple this pie is to prepare.

Brandy Woodbury gets requests for her Raspberry Cream Cheese Pie. After one bite, I figured out why.

The sweet and tart raspberry filling goes nicely with the tangy cream cheese filling. A store-bought graham cracker crust adds a little crunch to every bite.

If your guests don’t like raspberry, no problem. Blueberry, strawberry, or cherry pie filling would also be tasty in this pie.

“This is a fast, light, and easy dessert that is great for entertaining,” thinks Thomas Bohne (Joppa, MD). His Balsamic Strawberries W/ Honey Vanilla Ricotta sounds and looks super fancy, but it’s extremely easy to make.

Balsamic vinegar and strawberries are a wonderful flavor combination. The balsamic is slightly sweet and tangy with a deep robust flavor. It enhances the natural sweetness of strawberries.

Ricotta cheese is sweetened with honey and just a touch of vanilla. Fresh basil sprinkled on top just adds to the freshness of this simple summer dessert.
