Simple Casseroles for Your Recipe Box

When I’m asked what types of recipes should be in their Recipe Box, people are surprised by my answer. A collection of casseroles. Why? Because they’re easy to make and can be served for breakfast, lunch, dinner, or dessert. Here are five simple casseroles for your recipe box.

Breakfast casseroles are perfect for a lazy weekend breakfast or brunch and Natasha Nalley’s (Frederick, MD) Egg, Potato, and Cheese Casserole is delicious.

“The original recipe didn’t have the onion or meat,” reveals Natasha. “I add those but I usually don’t measure, so feel free to use as much as you like.”

In this recipe, if you cook the potatoes the night before, this comes together in a snap in the morning.

I used bacon as my meat of choice and it made for a wonderfully complete meal! All the yummy flavors of a traditional breakfast in one easy dish.

When was the last time your kids requested cauliflower? They will after they try Amanda Bryant’s (West Brooklyn, IL) Cauliflower Casserole.

“I love cauliflower and found this in my mom’s recipes,” explains Amanda. “I modified it to use Velveeta instead of Cheese Whiz.”

Melted Velveeta creates a super cheesy sauce. On top are french fried onions that add a little crunch.

Made with 4 ingredients, this recipe comes together in a snap. Serve with roasted chicken, grilled chicken, or even a juicy steak. Perfectly creamy and delightfully filling.

Love meals that are easy to make and pack a punch of flavor? Then add Gail Welch’s (Carthage, TX) Italian Casserole to your menu.

“I love the meaty marinara pasta that you can buy, so I decided to try to make it at home,” shares Gail. “It is easy to make and very appetizing.”

This is full of tomatoey flavor and has a great meaty taste throughout the dish. The bits of ooey, gooey cheese is perfect. Gail is right, it tastes like a cross between pizza and lasagna. So good!

“This is a favorite in my household,” says Michelle Waco (Cornelius, OR). “This is the best to get veggies down my kids some days.”

Michelle shared her recipe for Arielle’s Favorite Tuna Casserole that’s a twist on traditional tuna casserole.

It’s a creamy casserole with the perfect ratio of pasta, cheese, and tuna. The addition of sweet peas gives the dish a little crispness and sweetness that accents the savory cheese.

Now you may not think bread pudding is a casserole. But when you think about it, it’s baked in a pan like a casserole. Candy Beard’s (Mount Vernon, WA) Toffee S’mores Bread Pudding is a wonderful bread pudding. If you like s’mores, you’ll like this dessert.

“I love making this for my granddaughters on cold nights,” shares Candy. “It’s almost as good as camping out.”

With a name like that, how could we not fall in love?! The French bread is soaked in chocolate milk, instead of traditional milk or cream. It amps up the chocolate flavor.

Candy makes a topping of crumbled graham crackers and mini marshmallows. Those with the chocolate bread pudding really do make this treat taste like a s’more.

The next time you’re wondering what to make, try a casserole. They’re always a hit in my family and I think they will be for yours too.
