Cindy Ferguson (Shepherdsville, KY) was experimenting in her kitchen when she came up with her Apple Bacon Meatloaf. “This turned out to be a great hit with the whole family,” shares Cindy.
Meatloaf is always a favorite in my house and I love to make this when I’m looking to put a twist on meatloaf. Apple, apple butter, and applesauce are mixed into the meat. Chopped bacon is also added to give the meatloaf a very sweet and savory flavor profile. More apple butter and barbecue sauce are spread over the top to create the best tangy and sweet glaze.
“I absolutely love prosciutto,” explains Amanda Smith (Dunlap, IL). “The combination of the apple and the prosciutto will surprise you with how delicious it tastes and how elegant it looks.”

Simply superb! It’s a nice contrast to the savory pork. Try this relish with turkey or chicken breasts too.
