As much as my family eats multiple plates of food and leaves the table stuffed, we still seem to have a lot of leftovers after our Christmas dinner. I always tend to make too much ham and mashed potatoes. I make sure to store those in the fridge so I can create something tasty with them the next day.

Blending some of the vegetable and potato mixture gives the soup a thicker texture without losing the chunks. It was a wonderful consistency. This soup recipe is creamy and perfect for a cold evening.

“I had a good size piece of ham leftover so I cut it into bite-sized pieces and created this recipe,” explains Bonnie. This casserole is creamy, cheesy, and very tasty. The recipe comes together in a snap and the whole family will love it.
Fran Miller (Parkersburg, WV) turned her extras into Jennie’s Ham & Cheesy Potatoes Casserole. It’s full of flavor and made with very simple ingredients.
“I love holiday leftovers,” shares Fran. “This is my daughter Jennie’s creation made with leftover ham. She said it is also good with turkey.”
The savory ham and cheese pair well the potatoes to make one yummy meal. Sauteing onions adds some sweetness to the recipe and balances the savory ham. The one trick to this recipe is slicing the potatoes on the thin side so they bake quicker.
Gina Collier’s (Shelbyville, TN) Leftover Mashed Potato Cornbread brings back so many memories. As a child, I loved potato pancakes and corn cakes. This recipe is a great combination of both of them! A great way to use leftover mashed potatoes (and really easy to make).
