In my part of the country, one day it’s cold the next it’s warm. I’m not sure Mother Nature can figure out what season it is. Even if the weather is a tad warmer, around now in my house it’s always soup season.
The smell of a pot of soup simmering on the stove makes me happy. There’s really nothing better than homemade soup. And it’s so simple to make!
“Packed full of flavor, this Tuscan Sausage and Vegetable Soup is simple, easy and full of vitamins with all the veggies in it,” says Rose Rauhauser (Bronx, NY) of her grandmother’s healthy recipe.
This yummy soup has rich flavor of sweet Italian sausage mixed with the fresh herbs and vegetables. They balance together perfectly after simmering for an hour or so. I like the tip of blending a can of cannellini beans for thickness. This is hearty enough it could be served as a main dish. And, the cheese on top is a must! It adds an extra pop of flavor.
Kelly Roberts’ (Oscoda, MI) Bean Bacon Blue Cheese Tomato Soup is made for blue cheese fans. “The blue cheese gives this soup a little zing,” explains Kelly. “I added the bacon, crumbles, and garlic croutons to really top this soup off.”
I love the bold flavors. The blue cheese and cream cheese definitely add a bit of tang to the soup. Salsa is an unusual ingredient, but provides so much flavor and, combined with northern beans, add texture. Creamy and satisfying, this is perfect for a cold night.
Having a Mexican night in your home tonight? Instead of Taco Tuesday, why not turn your favorite flavors into a soup and whip up a batch of Wanda Grundmann’s (Kenner, LA) Mexican Corn Soup. It’s good and creamy with just the right amount of heat.
Wanda jokes to “be prepared to hear a lot of mmmm’s at the dinner table.” Joy Fulkerson (Indianapolis, IN) made it for her family and it was a big hit. She loved it, but sounds like her husband was a very big fan… he had three bowls!
I doubt Wanda had any leftovers after that meal, but if you’re looking for a way to use leftover chicken, pork or steak try Karla Everett’s (Greenacres, WA) Asian Noodle Soup. “It’s quick and easy to make when you have leftover meat,” says Karla.
William Hartwell made the recipe using bbq Thai pork and added a bit of Sriracha, fish sauce, and bok choy and “everyone enjoyed themselves and all went back for seconds.” That’s one of the things I love about this recipe. It has wonderful flavor and you can increase the seasoning or cut back on the heat depending on your preference.
