It seems the entire country has been stuck in a heat wave these past few weeks. The air conditioning in my house has been running full steam ahead and I think it’s ready for fall’s arrival.
Until fall arrives, though, I’m looking for ways to beat the heat. The best way I know… by enjoying some tasty no-bake desserts.
Cathy Smith’s (Phenix City, AL) Bourbon Cream Pie is worth turning the oven off. Her “son-in-law was the inspiration for this pie,” and he’s got some great taste.
Honorary Test Kitchen Member Teresa Jacobson (Jacksonville, FL) taste tested this Blue Ribbon recipe and thought it was “fantastic.” In fact, Terese joked “her husband can’t stop talking about how good this is.” Using a pre-made chocolate cookie pie crust makes this come together in a snap. The hardest part of the recipe is waiting for it to chill. Light and creamy, adults will enjoy this simple dessert.
If you love that famous nougat, caramel, and peanut candy bar, then Lisa Mersereau’s (Marysville, WA) Snickers “No Bake” Cheesecake is for you! “We love cheesecake and [my] twins love Snickers,” shares Lisa. “I decided to try and make something that would satisfy everyone.”
Lisa’s really decadent dessert will vanish in minutes. Trust us, it did in the Test Kitchen. It tastes just like the candy bar… in fact, it may be better. I just loved the creaminess of the filling and the gooey nutty layer. So good!
“This is not a dietetic recipe,” jokes Betty Graves (Germantown, TN) of her Banana Pudding Squares. “It’s a step-up from other banana pudding recipes.”
Betty’s recipe has the awesomeness of banana pudding and banana cream pie all wrapped up in a cute square package! You really taste banana in each layer. This recipe gets two thumbs up from this banana pudding lover and I bet it will from your family too.
Linda Smith (Oelwein, IA) came across Lisa G.’s (Buffalo, NY) No Bake Chocolate PB Pretzel Ritz Bars and had a hunch her hubby was going to love the recipe. With a pretzel, cracker, and peanut butter crust, then topped with chocolate and peanut butter what’s not to love about this extremely easy recipe? If you love a sweet and savory dessert, then you’ll love this.
“This Oreo Mint Chocolate Chip Freeze is one of my favorites that my mother used to make for us as a child,” Victoria Whitfield (Tampa, FL) reminisces. “I am grown and still love making it for my hubby.”
Mint chocolate chip and fudge are one of my favorite flavor combinations. Victoria’s recipe is so good, I had a hard time not eating the whole pie. Mint chocolate chip not your thing? I’m sure you could substitute another flavor. I bet even a basic vanilla would be delicious. It’s the perfect treat for a special party or on a warm summer afternoon.
“I’m sure someone has invented these but just in case, I just did,” jokes Bobbie Hewitt (Lenoir City, TN) of how she came up with her Rocky Road Rockets. “They’re really quite good.”
This tasty little treat reminds me of peanut butter and marshmallow creme sandwiches. I used the honey peanut butter as suggested and it adds to the yumminess. You won’t be disappointed. These would be great at a party or as a fun after-school treat. They’re fun!
