One of the girls in the Test Kitchen was saying she has a standing monthly Sunday brunch date with a few friends. It’s a way for them to check out new restaurants, but also to catch up on everything that’s happening.
We started talking about next month hosting brunch at a friends house and what brunch recipes would be big hits.
I like to serve a quiche at my brunch. They are easy to prepare and are impressive. A favorite is Desiree Macy’s (Ft. Myers, FL) Crustless Ricotta Quiche (Vegetarian). “This is such a light and fluffy quiche,” says Desiree.
Desiree’s quiche is lovely. When I tested this, I chose not to add in the meats to keep it vegetarian. And it was wonderful! I like that this is gluten-free for friends who have a sensitivity. But, if you wanted to add some ham or ground sausage that would be delicious too.
“This is the best spinach quiche I have ever had,” exclaims Katrina Freed (Newark, DE) of her Kitty Spinach Quiche recipe. “I usually make my own crust, but if you want a faster, easier quiche I am sure a purchased pastry shell will do the job.”
I’m all about shortcuts, but, honestly, it’s not very hard to create the crust if you follow Katrina’s recipe. The outcome is worth it. This scrumptious quiche has a perfect blend of flavors – bacon, onion, spinach, and ooey gooey cheese. Yum, oh yum.
Tammy Wade’s (Lees Summit, MO) Crabby Patty Brunch Bake is a different type of brunch casserole and it’s delicious! “If you wake up crabby in the morning, you won’t be for long… this goodie will happy-fy you,” jokes Tammy.
The half and half along with the red and green peppers really contribute to the awesome flavor of this recipe. If you like crab, add this to your next brunch. It’ll be a hit!
“This Asparagus Omelette is one of my favorite breakfast/brunch recipes because it is so flavorful and quick and easy to make,” shares Teresa G.
With it being asparagus season, fresh stalks are readily available and add a slight crunch. I love the prosciutto in here. It elevates this simple omelette.
Rebecca Evans (Danville, CA) Dutch Apple Baby with Blackberry Hoisin Bacon is the perfect sweet and savory combination. “Served with additional blackberry syrup and a piping hot cup of coffee, the recipe is scrumptious,” Rebecka says.
I really like how the bacon is basted with blackberry jam, hoisin sauce, and brown sugar. It creates the best flavor and takes the bacon to a whole new level. Butter and brown sugar caramelize the apples and is a great contrast to the bacon. A Dutch Baby is basically a fancy pancake everyone will love.
Want to add some sweets to the menu? Try Cindy Graul’s (Wyncote, PA) Raspberry Honey-Walnut Crescent Rolls or Jacquelyn Limina’s (Duquesne, PA) Easy Delicious Pull-Apart Sticky Buns. Both are delicious.
“These little tidbits are a delicious bite of sweet and savory,” thinks Cindy. “The nuttiness combined with fruit and cream is sure to be a show-stopper when company comes over.”
The best part of this recipe is you can make them in about five minutes with ingredients you probably have in the fridge. Guests will love these goodies!
Jacquelyn’s recipe is super simple and oh so good! “I needed to do something that was easy and simple for dessert one night and I came up with these,” explains Jacquelyn. “Plus I needed to use up some cans of refrigerated biscuits.”
Caramel sauce adds just the right amount of ooey, gooey goodness to these treats. While Jacquelyn made these for dessert, I think they’d be perfect for brunch too.
