Part of what I love about this sandwich as an adult are the endless combinations. All you need is two pieces of bread, butter (or mayo) cheese, and a creative mind.

“Grilled cheese and pizza are my favorite foods, so why not make an ultimate food,” suggests Cara. I made two just how Cara wrote the recipe and they were great – mozzarella, provolone and Parmesan cheese, pepperoni, ham, black olives, torn basil and other goodies.
The different cheeses and fresh basil are a very nice touch. You really do have the flavors of a pizza in the sandwich. Get creative and add your favorite pizza toppings… the options are endless.
After one bite of Amy Freeze’s Grilled Pimento Cheese & Bacon with Pepper Jelly, it was all I thought about the rest of the afternoon. Seriously.

Amy’s sandwich is ooey, gooey delicious! Pimento cheese is a favorite for this southern gal, and I love using it as a basis for a grilled cheese. It’s so creamy and melts nicely. You get a bit more sweet and spicy from the pepper jelly. Bacon adds a smoky finish, and we all know everything is better with bacon!
