While available year around, I tend to gravitate towards sweet potatoes in the fall. Besides being tasty, they have tons of health benefits. Sweet potatoes contain vitamin C, D and a great source of magnesium and potassium. So versatile, there are many ways to incorporate them into your cooking.
I can’t think of a better way to start the weekend than with a batch of Kathy W.’s Sweet Potato Hash. I love how she pairs sweet potatoes with white potatoes. I never thought about mixing the two of them, but I’m glad Kathy did.
“This is my version of a very versatile dish,” shares Kathy. The sweet potato adds a new layer of flavor to an ordinary hash. It works great for breakfast, but I bet this would go nicely with some pork chops too. It’s so good!
Thanks to the addition of sweet potatoes, Lisa Smith’s Sweet Potato Cornbread with Cinnamon Honey Butter is super moist. “The sweet potatoes give this cornbread a delicious twist,” says Lisa. “It is wonderful served with cinnamon butter while still warm.”
This cornbread is not overwhelmingly sweet so it will pair nicely with an assortment of recipes. It will be great with a hearty bowl of chili. Or, start your day with a nice slice. The cinnamon butter is optional, but I highly recommend it.
If you’re a fan of baking sweet potatoes, I’d suggest trying Megan Todd’s Thanksgiving Twice Baked Pumpkin-Sweet Potatoes. “It is an easy recipe with a nice creamy texture and a hint of sweetness,” explains Megan. “Add the fresh ginger and they’ll be begging for more!”
Megan’s recipe is a great way to jazz up ordinary sweet potatoes. The cream cheese makes the whipped sweet potatoes super creamy. Pumpkin, nuts and bacon add punches of flavor and make ’em even better. These will be a great addition to your holiday table and, honestly, would be great year around!
One popular side dish around Thanksgiving is sweet potato soufflé. As tasty as that is, Jessica Silva has taken her basic recipe and turned it into something special! “I make a sweet potato soufflé for the holiday’s that I’ve always said tastes like dessert,” says Jessica. “So I wanted to turn it into a dessert and this is what I came up with.”
Jessica’s Sweet Potato Marshmallow Swirl Cheesecake is worth saving some room after your Thanksgiving meal for. It has the best qualities of cheesecake and pumpkin pie! The sweet potato filling is really creamy and tastes divine thanks to sugar and spices. Then, she swirls a marshmallow mixture throughout the cheesecake. The gingersnap just adds that last bit of spice. This recipe is oh so nice!
Brenda Watts incorporates sweet potato into her Frosted Spicy Sweet Potato Bars. “For as long as I can remember, during the holidays my family has always gotten together to share in our holiday cookies,” reminisces Brenda. “One of our favorites are these yummy bars.”
